Bread risen with love!
Bake this loaf on your peace day when you’re not in a hurry. Even though the dough is quick to make, you can feel the difference when it came from a place of peace.
Makes 1 small loaf.
Start with:
Music: helps to tune in with oneself. Play anything you like! As I do dancing, I like to play my dance tunes while I cook – this fills the whole process and the bread itself with a special energy.
Silence can be just as good.
Silence can be just as good.
Love: Just use as much as you have in the moment and are comfortable to put into your baking. Be sure to save some for yourself.
Ingredients:
1 cup sorghum flour (sifted)
1/2 cup coconut flour (sifted)
1/2 – 1 teaspoon sea salt flakes
3 tablespoons dried barberry
2 tablespoons golden flax seeds
1/4 tablespoon cinnamon
1/4 teaspoon vanilla extract
1 cup water
4 tablespoons coconut oil
1 teaspoon baking soda
1 teaspoon apple cider vinegar
2 tablespoons ground chia seeds
2.5 heaped teaspoons psyllium husks
Method:
Start with love. Mix the flour, sea salt, barberry and flax seeds in a mixing bowl. Add 1 cup of water. Mix with a mixer. I use an electric mixer with special dough hooks. Add cinnamon, vanilla extract, baking soda and apple cider vinegar, mix with the mixer. Add chia seeds and psyllium husks, mix well together until obtaining a more solid texture. Your dough should be pretty well formed and easy to pick up from the bowl now. Melt and mix in 2 tablespoons of coconut oil.
Heat oven to 180C. Grease a small bread mould with coconut oil (1 tablespoon). Put the dough in. Melt the remaining 1 tablespoon of coconut oil and pour it on the top of the loaf. Bake the bread for 1 hour. Then take the bread out of the mould and leave in the oven for another 20 minutes to form crust. Now your bread is ready! Remove from the oven, cool and serve.

Storing conditions
As this is a gluten free bread, it can go stale quickly. So better keep it in a freezer. When the loaf cooled off, slice it, put in a paper bag and freeze. Then toast in the oven on ‘grill’ mode as many slices as you need. This bread is even better toasted. Enjoy what you have done 🙂
